Make your morning a little more Mexican with this tasty Breakfast Burrito. It’s packed with protein and plant goodness. What a way to start the day.

Ingredients

  • 40g avocado

  • 1 medium tortilla wrap

  • 100g sweet potato

  • 20g black beans

  • 1/4 tsp cumin

  • 1 dashes chilli flakes

  • 3 large egg whites

  • 20g cheddar cheese

  • 4 sprays 1-kcal cooking spray

Method

  • First, pierce the potatoes with a fork 5-8 times. Cook them in the microwave until cooked all the way through. The size of the potato and power of the microwave will determine how long this takes (should be 6-10 minutes).
  • Once cooked, cut in half and spoon out the flesh before mashing with a fork and set aside for later.
  • Add the black beans, chilli flakes, and cumin to a large bowl and stir together. Set aside with the mashed sweet potato.
  • Spray a frying pan with cooking spray and place over a medium heat. Whisk the egg whites in a bowl and pour into the pan. Mix and fold the whites often until scrambled, then remove from the heat.
  • Mash your avocado flesh with a fork and place in a small bowl.
  • Now that all fillings are prepared, heat the tortillas in the microwave just until warm (approx. 20 seconds) spoon the fillings into the centre of your tortilla, season with salt and pepper, sprinkle over with cheese and fold the sides in to create a burrito.
