Sometimes simple is all you need, and that’s exactly what you get with this easy Chicken, Rice and Veg recipe.

Ingredients

  • 220g chicken breast

  • 75g (dry) basmati rice

  • 40g kale

  • 1 red bell pepper

  • 50g portobello mushroom

  • 3 sprays 1-kcal cooking spray

Method

  • Cook the chicken breast in a tin foil pouch 180C (fan oven 160C) for 35-40 minutes or until cooked through.
  • Boil the rice until soft, then drain and rinse with cold water.
  • Heat a frying pan or wok and cover with the cooking spray. Add the peppers and mushrooms and allow to cook for 2 minutes. Then add the kale for a further minute. Finally, 50ml of water and allow to steam for 60-90 seconds.
  • Serve the chicken, rice and veg on a plate and enjoy.
