This Chicken with Indian Coleslaw recipe makes for a great light lunch or dinner. And those spices and flavours just take it up a notch.

Ingredients

  • 180g chicken breast

  • 3 tsp coriander, chopped

  • 2 tsp cumin

  • juice of 1 lime (plus zest)

  • 2 tbsp olive oil

  • 2 tsp turmeric

  • 200g red cabbage, sliced

  • 2 medium carrot, grated

Method

  • Preheat the oven to 200C (fan oven 180C).
  • Finely chop the coriander. Combine with the cumin, olive oil, lime juice and zest.
  • Sprinkle the turmeric over the chicken and then rub in half of the dressing into the flesh of the chicken. Place in the oven for 20-30 minutes or until cooked through.
  • Mix the rest of the dressing with the cabbage and carrot and serve alongside the chicken.
