Ingredients
1 whole wholewheat bread bun
1 medium spring onion, chopped
1 large egg
1 tbsp light mayonnaise
1 small tomato, sliced
salt & pepper
Method
- Boil the egg. When peeled and cooled, cut into thin slices.
- Arrange the egg slices on the bread, top with the spring onion (a.k.a. scallions).
- Season with salt and pepper.
- Spread the mayonnaise on top.
