Ingredients

  • 1 whole wholewheat bread bun

  • 1 medium spring onion, chopped

  • 1 large egg

  • 1 tbsp light mayonnaise

  • 1 small tomato, sliced

  • salt & pepper

Method

  • Boil the egg. When peeled and cooled, cut into thin slices.
  • Arrange the egg slices on the bread, top with the spring onion (a.k.a. scallions).
  • Season with salt and pepper.
  • Spread the mayonnaise on top.
