Ingredients

  • 1.5 tbsp extra virgin olive oil

  • 280g tofu

  • 300g portobello mushroom, halved

  • 1 medium spring onion, sliced

  • 1 yellow bell pepper, sliced

  • 1/2 tbsp curry powder, mild

  • 1 tsp cumin

  • 1 tsp turmeric

Method

  • Mix the curry powder, cumin and turmeric together in a small bowl.
  • Place a large non-stick frying pan over medium-high heat and pour in the oil. Tip in the mushrooms, peppers, spring onions and fry for 8-10 minutes.
  • Use your fingers to crumble in the tofu. Stir in the spice mix and stir-fry for a further 6-8 minutes.
  • Season to taste and serve.
