Ingredients
1.5 tbsp extra virgin olive oil
280g tofu
300g portobello mushroom, halved
1 medium spring onion, sliced
1 yellow bell pepper, sliced
1/2 tbsp curry powder, mild
1 tsp cumin
1 tsp turmeric
Method
- Mix the curry powder, cumin and turmeric together in a small bowl.
- Place a large non-stick frying pan over medium-high heat and pour in the oil. Tip in the mushrooms, peppers, spring onions and fry for 8-10 minutes.
- Use your fingers to crumble in the tofu. Stir in the spice mix and stir-fry for a further 6-8 minutes.
- Season to taste and serve.
